Smoked Paprika

Smoked paprika, also known as pimenton or smoked Spanish paprika, is made from smoked and dried peppers over oak fires. This process imparts a rich, smoky flavor to the red powder. Unless you buy a hot, smoked variety, the flavor remains sweet and cool without adding any heat to the dish.
