Dry Lemon

Dried lemons, which are actually limes, are widely used in Persian Gulf and Iranian cuisine, where they add a strong bitter flavor in addition to sourness. They are made by boiling ripe limes in salt water and then drying them in the sun until the insides turn black. The color of the outside varies from tan to black.
